Michael founded Culimer USA LLC in 2019 with a mission to improve to-go sushi in North America. He leads a team of passionate specialists creating clean, all-natural, sustainable, and traceable ingredients for large sushi operators nationwide. Culimer USA develops and imports sushi ingredients from Japan, New Zealand, Vietnam, Korea, Norway, Canada, Indonesia, and Fiji.
A dedicated food safety advocate, he has led Culimer USA to GFSI certification and MSC/ASC Chain Of Custody certification.
Long an advocate for electronic traceability, he serves as Chairman of the supervisory board of the Global Dialog on Seafood Traceability (GDST).
A proud member of the National Fisheries Institute (NFI), he is the founding chairman of the NFI Sushi Council launched in 2023.
