PhD in biology. Master’s degree in Quality Management. Since 1996 principal scientist in AZTI, he has participated as researcher and principal scientist in several R&D National and Regional funded projects and in 10 international projects in the domain of the valorization of food industry by-products as well as in food product development involving food companies. His research is now focused on the recovery of proteins with technological and bioactive properties for food and feed applications.
